3 large ears fresh corn
1 large tomatoes, finely chopped
1 (7 oz) jar roasted sweet red pepper, drained and chopped
2 green onions, chopped
1 jalapeno pepper, seeded and minced
3 tbsp minced fresh cilantro
2 tbsp lime juice
1 tbsp white wine vinegar
1/2 tsp salt
1/4 tsp pepper and ground cumin
2 avocados, chopped (optional)

Cut corn from cobs. Stir together with next 10 ingredients and add avocado. Cover and chill at least 2 hours before serving. Serve with tortilla chips.
