1 cup herb stuffing, crushed
1/3 cup freshly grated Parmesan cheese
1/4 cup finely chopped fresh parsley
1 clove garlic, minced
1 (3 lb.) frying chicken, cut up
1/4 lb. butter, melted
Preheat oven to 350. Combine stuffing, cheese, parsley, and garlic. Set aside.
Dip chicken pieces in melted butter and then in stuffing mixture, coating thoroughly. Place chicken pieces, not touching on a cookie sheet or shallow baking pan, skin side up. Bake, uncovered, for 45 minutes to 1 hour, turning oven down if chicken browns too quickly.
NOTE: Chicken may be baked ahead and served at room temperature.
VARIATION: Use boneless, skinless chicken breasts and instead of baking, heat 1/4 cup olive oil in a skillet and brown chicken on each side. Add 3/4 cup white or rose wine and simmer for about 20 minutes. Stir in 1 cup sour cream and serve.
