1 2/3 cups chicken broth
1 cup long grain rice, uncooked
1/2 cup dry white wine
1/4 tsp pepper
Cooking spray
1 cup sliced mushrooms
1/4 cup finely chopped celery and green onions
1 (14 oz) can artichoke hearts, drained and chopped
3/4 cup tomato, peeled, seeded and diced
3 tsp minced parsley
1/4 tsp salt

Combine first 4 ingredients in a saucepan; bring to a boil. Cover, reduce heat, and simmer for 20 minutes or until liquid is absorbed; set aside and keep warm.

Coat a large skillet with cooking spray; place over medium-high heat until hot. Add vegetables and saute until tender. Add reserved rice and remaining ingredients; stir well. Cover and cook over medium heat 2-3 minutes or until heated through. Serves 10
