Category: Chicken
Prep Time: Cook Time: Total Time:
1 whole chicken, cut into pieces (about 3 to 3-1/2 lbs, for best flavor do not remove the skin)
Seasoned salt, garlic powder and pepper
2 cups prepared favorite barbecue sauce (more for basting the chicken the last 30 minutes of cooking time)
Set oven to 350 (rack set to lowest position). Grease a 15 x 10-inch jelly-roll pan or large baking sheet. Fit a rack into the pan then grease the rack for easy clean-up. Pat the chicken completely with paper towels then place skin-side down onto the rack. Season each piece of chicken with seasoned salt, black pepper and garlic powder; turn the chicken skin-side up and season again. Cover with foil and bake in a preheated oven for 45 minutes.
Remove from the oven then brush with barbecue sauce on both side (make certain to place the chicken skin-side up again). Return to oven and bake uncovered for another 30 minutes, basting the top of the skin with more sauce about halfway through cooking.
