ROASTED PARMESAN POTATOES

1/3-1/2 cup butter
1/4 cup flour
1/2 tsp salt
1/4 tsp pepper, garlic powder and paprika
1/4 cup chopped fresh parsley
2 tbsp chopped fresh rosemary
1/4 cup freshly grated parmesan cheese
6 medium red potatoes
1 tbsp fresh chives, minced

Preheat oven to 350. Place butter in a 9 x 13 pan and place in the oven to melt. While butter melts, wash and quarter potatoes.

In a large Ziploc bag, mix together flour, salt, pepper, garlic powder, paprika, parsley, rosemary and cheese. Add potatoes a few at a time to bag and shake well to coat with flour mixture. Remove baking dish from oven and as you place each potato piece in the dish roll it in the butter. Arrange pieces in a single layer. Bake until potatoes are tender and brown, about 50 minutes. Sprinkle with chives before serving.
