4 tsp olive oil
1 medium onion, coarsely chopped
1 lb ground beef
Salt and pepper, to taste
1 (8 oz) pkg manicotti, cooked al dente, drained
1 (15 oz) container ricotta
3 cups shredded mozzarella
1 cup grated parmesan cheese
2 tbsp chopped parsley
2 clove garlic, minced
3 cup favorite marinara sauce

Preheat oven to 350. While pasta is cooking, in a skillet, brown onions and ground beef in 1 tbsp olive oil. Season with salt and pepper; drain and allow to cool. Brush 1 tsp oil over large baking sheet. Place drained manicotti to the oiled baking sheet and allow to cool.

Combine ricotta, 1 1/2 to 2 cups mozzarella cheese, 1/2 cup parmesan and parsley, season with garlic, salt and pepper. Stir in cooked beef mixture. Brush remaining olive oil in a 13x9 inch baking pan. Spoon 1 1/2 cups marinara sauce in bottom of pan. Fill pasta shells with filling and arrange in a singe layer in baking dish. Spoon remaining sauce over pasta and sprinkle with remaining cheeses. Bake, uncovered, about 30-35 minutes. Let manicotti rest 5 minutes before serving.
