1/3 cup butter (can use half butter and oil)
1 small onion, chopped
4 garlic cloves, minced
1 tbsp flour
1/2 tsp crushed red chili flakes, or adjust to taste (can omit if desired)
5 cups light cream (can use half milk and light cream)
2 cans condensed cream of mushroom soup, undiluted
2 cups cooked chopped ham
1 (14-oz) can corn kernels, drained
1(15-oz) can great Northern Beans, drained
1 tsp fresh ground black pepper, or to taste
1/3 cup fresh grated Parmesan cheese
In a saucepan heat butter over medium-high heat. Add in onion and saute until softened (about 3-4 minutes). Add in garlic and chili flakes; cook stirring for 2 minutes. Mix in the flour for 1 minute. Stir in the cream until blended. Add in all remaining ingredients; bring to a simmer over medium heat stirring constantly. Reduce heat to low and simmer about 25-30 minutes. Season with salt if needed at the very end of cooking time. Ladle into bowls and sprinkle more Parmesan cheese on top. Serves 4-6
