1 large egg white
2 cups blanched almonds
2 tbsp sugar
2 tsp salt, cayenne pepper and paprika

Preheat oven to 300. In a small bowl, whisk the egg white until foamy. In a medium bowl, combine the nuts and 2 tbsp of beaten whites, discard the rest. Toss well to coat the nuts.

In a small bowl, combine the spices and sprinkle over the nuts, stirring to evenly coat them. Spread in a single layer on an ungreased cookie sheet. Bake, stirring occasionally, for 15-20 minutes or until the nuts are fragrant and toasted. Transfer the baking sheet to a wire rack. Let the nuts cool completely before serving them.
