1/2 cup (2 oz) crumbled blue cheese
2 tbsp cider vinegar
11/2 tsp Dijon mustard
1/4 tsp salt and pepper
6 tbsp extra-virgin olive oil

Place cheese, vinegar, mustard, salt and pepper in food processor or blender, pulse briefly to mix. With processor running, slowly add oil until mixture is well-blended.
