2 cups flour
2 tsp baking powder
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1 cup sugar
1/2 cup butter, softened
2 eggs
1 tsp vanilla extract
2/3 cup evaporated low-fat milk
3 medium baking apples, cored, peeled and finely chopped
3/4 cup finely chopped pecans
confectioners sugar
Preheat oven to 350. Grease a 13x9 inch baking pan. Combine dry ingredients; set aside. Beat butter and sugar until creamy. Beat in eggs, one at a time, beating after each addition and vanilla extract until smooth. Alternately beat in flour mixture and milk. Stir in apples and nuts. Spread batter into pan and bake 40-45 minutes. Cool in pan on a wire rack for 20 minutes. Cut into bars and sprinkle with confectioners sugar before serving.
