1 cup butter, softened
3/4 cup sugar and packed brown sugar
2 eggs
1 tsp vanilla extract
2 1/4 cup flour
1 tsp baking soda
1 (10 oz) pkg vanilla chips or 1 cup coarsely chopped white chocolate
1 1/2 cup dried tart cherries
1 cup coarsely chopped cashews
Beat first 5 ingredients until well combined. Combine flour and baking soda. Gradually add flour mixture to creamed mixture; mix well. Stir in chocolate, dried cherries and nuts. Drop by rounded tbspfuls onto an ungreased baking sheet. Bake at 350 for 10-12 minutes, or until golden brown. Do not over bake. Transfer to a wire rack to cool. Store in a tightly covered container.
