Category: Roasts/Tenderloins - Pork
Prep Time:       Cook Time:       Total Time:

1 (2 lb) whole pork tenderloin
1 cup pepper flavored vodka (like Absolute Peppar)
2 garlic cloves, peeled and smashed
1 thick slice of onion

Place all ingredients in a large Ziploc baggy. If using regular flavored vodka, add 1 tsproughly crushed whole black peppercorns. Refrigerate for 1-2 hours, turning so often so all sides marinate. Remove the pork and discard the marinade.

Preheat oven to 350 or preheat grill to medium heat. Bake or grill until center is cooked to 140 degrees, about 20 minutes. Serve with your favorite BBQ sauce mixed with apple juice as a dipping sauce.
