Serves/Makes: 4
Ready in: 30-60 minutes
- 1 cup shredded cheddar cheese
- 1 cup shredded Swiss cheese
- 1(9-inch size) pie crust, thawed
- 1/2 cup real bacon bits
- 1 package (10 ounce size) frozen chopped spinach, thawed & squeezed dry
- 3 eggs
- 1 cup heavy cream
- 1 teaspoon onion powder
- 1/4 teaspoon white pepper
- 1/4 teaspoon ground nutmeg
Preheat the oven to 350 degrees F. Combine the Cheddar cheese and Swiss cheese in a bowl. Sprinkle half of the blended cheese mixture in the bottom of the pie crust. Sprinkle the cheese with the bacon bits and spinach, then top with the remaining cheese. Whisk together the eggs, heavy cream, onion powder, and white pepper in a bowl until frothy. Pour the egg mixture into the pie crust. Sprinkle the top of the quiche filling with the nutmeg. Place the quiche in the oven and bake at 350 degrees F for 40-45 minutes, or until the quiche is set. Remove the quiche from the oven and let it cool on a wire rack for 5 minutes. Cut the spinach and bacon quiche into wedges and serve.
