BEEF CASSEROLE WITH CREAMY CHEESE PASTA

1 tsp vegetable oil
1 onion, chopped
1/2 cup beef stock
1 (8 oz) pkg small shell pasta
2 1/2 tbsp flour
1 1/4 cups milk
2 tbsp grated parmesan cheese
2 tsp crushed garlic
12 oz ground beef
1 2/3 cup prepared tomato sauce
1 tbsp butter
1 1/4 cup beef stock
1/2 cup shredded cheddar cheese

Preheat oven to 350. In a skillet, heat oil and saute garlic and onions for 4 minutes. Add beef and saute until no longer pink, approximately 4 minutes. Add stock and tomato sauce; simmer on low for 12 minutes or until thickened stirring occasionally. Set aside.

Cook pasta until firm to the bite. Drain and place in a baking dish. In a medium saucepan, melt butter; add flour and cook for 1 minute stirring occasionally. Add cheeses. Add meat sauce to pasta. Mix well. Pour cheese sauce over top. Cover and bake for 15 minutes or until hot. Let rest 10 minutes before serving.
