  • 1 box (1 lb. size) shell pasta
  • 1 can (15 ounce size) black beans, rinsed and drained
  • 1 can (15 ounce size) whole kernel corn, drained
  • 1 jar (16 ounce size) salsa
  • 1 can (4 ounce size) sliced black olives, drained
  • sliced green onions, as desired

Bring a pot of water to a rolling boil over high heat. Add the pasta and cook until al dente. Drain the pasta well and rinse with cold water. Place the cooked shell pasta in a large bowl.

Add the black beans, corn, salsa, and black olives to the bowl and mix well. Cover the bowl and chill for 3-4 hours.

Top the chilled Mexican pasta salad with sliced green onions and serve.
