1 1/2 cups sliced fresh okra
1 cup cornmeal
1/2 cup flour
1/2 tsp salt
Pepper, to taste
Vegetable oil for frying

Sprinkle salt over okra and let sit for a few minuts to bring out juice. In a shallow pan, mix together flour, cornmeal, salt and pepper. Gently roll okra in mixture and set aside on a wire rack to dry for 1 hour.

In a skillet, heat 1/2 inch oil until hot. Add okra pieces in a single layer, cook and roll gently with a fork until browned on all side. Drain on paper towels. Serves 6
