FETTUCCINE ALFREDO BLUE

1 (16 oz) pkg fettuccine
1 tbsp olive oil
1 clove garlic, sliced
4 oz blue cheese, crumbled
1/4 cup parmesan cheese
2 cups heavy whipping cream or half-and-half
1 tbsp Italian seasoning or 1 pkg dry zesty Italian dressing mix
Salt and pepper, to taste

Cook pasta al dente; drain. Heat olive oil in a small skillet over medium heat. Saute garlic in olive oil until golden. Discard garlic and reserve oil.

In a medium saucepan over medium-low heat, combine cheeses and cream. Stir until cheeses are melted. Stir in reserved oil. Season with Italian seasoning, salt and pepper. Toss hot pasta with sauce and let stand 5 minutes before serving. Serves 8

Notes: This is really good with slices of steak tossed in it.
