1 lb wagon wheel or other medium shape pasta, cooked al dente
1 lb beef tips, cut into bite-size pieces
2 tbsp oil
1 small onion, green pepper and garlic clove, chopped
1 (14.5 oz) can pinto beans, drained
1 (14 oz) can diced tomatoes
1 beef bouillon cube
1 tbsp cilantro
1 tbsp pepper
1/2 cup cheddar or parmesan cheese, grated
2 tsp salt
1 tsp Tabasco sauce
Garnish, additional grated cheese

While pasta is cooking, brown beef in oil, stirring frequently, for 10 minutes. Remove meat; set aside.

Cook chopped vegetables until onion is translucent. Add garlic and return beef to skillet.

Stir in next 3 ingredients, simmer until meat is tender. Add meat mixture to cooked pasta. Stir in remaining ingredients and garnish. Serves 6-8
