1 (9 inch) single pie crust
3 eggs
1 cup light corn syrup
1/3 cup packed brown sugar and white sugar
1/2 cup butter, melted
1 tsp vanilla
1/4 tsp salt
1 cup semi-sweet chocolate chips, flaked coconut and walnut or pecan pieces
Whipped cream and toasted coconut, for topping
Prepare the pie shell as instructed. Do not prick crust. Filling: In a medium bowl, combine eggs and next 6 ingredients. Layer the chocolate, coconut and walnuts in pie crust. Pour egg mixture over all, spreading evenly.
To prevent over browning, cover the edge of shell with foil. Bake at 350 for 30 minutes. Remove foil, bake for 20-25 minutes more until filling appears set when shaken gently. Cool on a wire rack. Cover; store in refrigerator 2 hours before serving. Garnish with whipped cream and coconut.
