1/2 cup butter, no substitute
3-6 oz crab or lobster meat
2 1/2 lb shrimp, shelled, deveined and cooked
1 pint oysters, optional
4 egg yolks, beaten
1 1/2 cups cream
3 tbsp sherry
3 tbsp flour
Dash EACH garlic powder, cayenne pepper, Tabasco and paprika
Salt, to taste
1/8 tsp lemon peel
1/2 lemon, juiced
Pastry puff shells, prepared per package directions

Heat butter to melt, add seafood, cook 3-4 minutes. Add yolk and cream. Stir flour, sherry and cream together, add slowly. Season to taste. Serve over pastry puff shells.
