4 tuna steaks
10 mint leaves
1/2 tsp salt and pepper
2 tbsp flour
3 tbsp olive oil
2 large onions, sliced
1/2 clove garlic, chopped
4 tbsp tomato paste
1 cup water

Make slits in tuna with point of knife and insert mint leaves. Sprinkle with salt and pepper. Roll in flour and brown on both sides in olive boil. Remove tuna and brown onions and garlic in oil. Return fish to pan and continue browning. Add tomato paste and water, cover pan and cook slowly 30 minutes. Serve tuna with pan gravy. Serves 4
