1 (14 oz) pkg miniature peanut butter cups
1 cup butter, room temperature
3/4 cup sugar and packed brown sugar
1 tsp vanilla extract
1 egg
2 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
1/2 cup miniature chocolate chips

Preheat oven to 350. Spray a miniature muffin pan with cooking spray. Remove wrapping from peanut butter cups. In a mixing bowl, cream together butter and sugars. Add vanilla and sugars. Sift together dry ingredients and add to creamed mixture. Mix well. Add chips and place about 1 tsp dough into each muffin cup. Bake 10-12 minutes or until brown but not too doughy. Immediately push peanut butter cups into middle of each cookie. Let cool completely before removing from pan.
