2 1/2 cups flour
1/2 cup unsweetened cocoa powder
1/2 tsp baking soda
1/4 tsp salt
2 tsp instant coffee granules (French roast dark coffee)
2 tsp coffee liqueur
1 cup sugar
3/4 cup packed dark brown sugar
1 cup butter, softened
2 large eggs
2 cups semisweet chocolate bar, coarsely chopped
Preheat oven to 300. In a medium bowl combine dry ingredients. Mix well and set aside.
In a small bowl dissolve coffee granules in coffee liqueur and set aside.
Beat sugars with and butter and mix to form a grainy paste. Add eggs and dissolved coffee granules, and beat at medium speed until smooth. Add flour mixture and chocolate chunks, and blend at low speed just until combined. Do not over mix. Drop by rounded tbsp onto ungreased cookie sheet, 2 inches apart. Bake for 23-25 minutes. Immediately transfer to a cool, flat surface.
