4 chicken breast halves, skinned & boned
2 tsp butter
1 green bell pepper, chopped
1 med. onion, chopped
2 (10 oz) can diced tomatoes & green chilies
1 can cream of mushroom and cream of chicken soups, undiluted
12 (6") corn tortillas cut into squares
2 cup cheddar cheese, shredded
Boil chicken breast and chop coarsely. Melt butter in a large skillet over medium heat; add bell pepper and onion, and saute until crisp-tender. Remove from heat, and stir in chicken, tomatoes and green chilies and soups.
Place 1/3 of tortilla quarters in bottom of a lightly greased 13x9 inch baking dish; top with 1/3 chicken mixture, and sprinkle evenly with 2/3 cup cheese. Repeat layers twice, reserving last 2/3 cup cheese. Bake at 325 for 35 min; sprinkle with reserved cheddar cheese, and bake 5 more min. Let stand 5 min. before serving. Serves 6-8
