1 pkg frozen pea bpds
2 unpeeled red apples, diced or 2 large naval oranges, peeled and sectioned
1 small zucchini, sliced
2 cups spinach
About 1/3 cup garnet dressing, recipe below
1/4 cup shelled sunflower seeds

Add pea pods to about 2 inch boiling water in a small saucepan. Boil for 1 minute and the drain and rinse in cold water. Combine the pea pods and the next 3 ingredients in a salad bowl. Add the dressing and toss lightly. Garnish with sunflower seeds.

Garnet Dressing
1/2 cup current jelly
1/4 cup lemon juice
2 tbsp Dijon mustard
1/2 tsp paprika and salt
1 cup oil

Melt jelly in a saucepan and stir in lemon juice, mustard, paprika and salt. Gradually add oil in a thin stream, stirring constantly with whisk until oil is absorbed and dressing is slightly thickened.

NOTE: This dressing is also good with other fruit salads.
