BEEFY FRENCH ONION SOUP - Crockpot

4 large Vidalia or sweet onions, thinly sliced
4 tbsp butter, melted
2 tsp sugar
2 tbsp olive oil
3/4 lb beef stew, cut into 1/2 inch cubes
1/4 cup dry sherry
4 cups beef broth
2 tsp Worcestershire sauce
1 tsp salt
1/2 tsp dried thyme
1 bay leaf
Pepper
2 cups grated gruyere cheese

Toss onions with the butter and sugar in a crock pot. Cover and cook on HIGH, until edges begin to brown, about 90 minutes. In a skillet, brown beef in olive oil, stirring occasionally, about 5-7 minutes. Transfer to the crock pot. Add sherry to skillet and scrap up browned bits. Add pan juices to crock pot, along with the broth, Worcestershire sauce and seasonings. Simmer, covered, for 2 1/2 hours on HIGH or 7 hours on LOW. Uncover and simmer for 1 hour more, until thick. Remove bay leaf.

When ready to serve, turn on broiler. Ladle soup into flameproof bowls and divide cheese over the tops. Place the bowls on a baking sheet and broil until cheese is melted and bubbling, about 3 minutes. Serve hot. Serves 4-6
