STUFFED BORDER BURGERS

1 1/2 lb lean ground beef
1/2 cup finely chopped onion
1 (4.25 oz) can chopped ripe black olives, drained
2 tbsp ketchup
1 tsp chili powder and fajita seasoning
6 (1 oz) slices Monterey jack cheese with peppers
1 tbsp minced fresh cilantro
6 onion rolls, split and roasted
Toppings: Shredded lettuce, slices tomatoes and guacamole

Preheat grill to medium-high heat. Combine first 6 ingredients. Shape mixture into 12 (4 inch) patties. Fold cheese slices into quarters; place cheese on each of 6 patties. Top with remaining 6 patties, pressing to seal edges.

Grill burger, covered, 4-5 minutes on each side or until done. Stir together next 4 ingredients. Serve burgers on rolls with sauce and desired toppings.
