1/4 lb ground beef
1/4 tsp garlic powder and pepper
1 cup baking mix
1/4 cup cornmeal
1/4 cup cold butter
2-3 tbsp boiling water
1 egg
1/2 cup half-and-half
1 tbsp chopped green onion and red bell pepper
1/4 tsp salt and cayenne pepper
1/2 cup finely shredded sharp cheddar cheese
In a saucepan, brown meat with seasonings; drain and set aside.
In a bowl, combine the baking mix and cornmeal; cut in butter. Add enough water to form a soft dough. Press onto the bottom and up the sides of a greased miniature muffin cups. Place tspful of beef mixture into each shell.
In a bowl, combine remaining ingredients except cheese. Pour over beef mixture. Sprinkle with cheese. Bake at 375 for 20 minutes or until toothpick inserted into center comes out clean.
