1 1/8 cup uncooked white rice
4 cups boiling salt water
1/4 cup cooking oil
1/2 cup green onions, sliced
1/4 cup chopped green bell pepper
1/4 cup sliced mushrooms
2 tsp minced pimiento
1/2 cup slivered almonds
1 cup cooked ham, cut into strips
2 tbsp soy sauce
Salt, to taste
2 tsp cooking oil
2 eggs, beaten
2 tsp green onion tips
Cook rice in water; drain and let dry. Heat the oil in a skillet and saute the next 7 ingredients.
Add the rice and cook slowly for 6 minutes, stirring well to blend flavor. Turn to very low heat, taste for salt, adding if necessary.
In a small skillet, heat 2 tsp oil and beaten eggs. Cook as if you were making a pancake. Let dry and cut egg into thin strips. Mix with rice. Remove to casserole, sprinkle with green onion tips and bake at 350 until heated. Serves 8
