1 cup shredded cheddar cheese
1 3 lb 4 bone frenched pork rack
1 tsp kosher salt
1/4 tsp fresh ground black pepper
1 tsp olive oil
1 cup Japanese bread crumbs (Panko)
1 tbsp melted butter
1 tsp freshly chopped parsley
1 tsp freshly chopped thyme
1/2 tsp kosher salt
1/4 tsp fresh ground black pepper
1 tbsp dijon mustard

Season the pork loin with 1 tsp of salt and 1/4 tsp of pepper. In a large heavy bottomed skillet over medium high heat, sear the pork loin in the olive oil until all sides are browned. Remove to a roasting pan.

In a medium bowl, mix the bread crumbs, cheddar, butter, herbs, 1/2 tsp of salt and 1/4 tsp of pepper together.

Rub the pork loin with the mustard, packing the cheese and bread crumb mixture onto all sides.

Preheat oven to 325 and roast for 55 minutes or until the internal temperature is 145. Let rest for 15 minutes before serving. Serves 4
