1 pkg chicken strips or 4 boneless skinless chicken breasts
1 (3 oz) bag of spring salad mix
1/2 each of red, yellow and orange pepper julienne or cut into strips
1 cup grape tomatoes cut in half
1/2 cup olive oil
3 tbsp apple cider vinegar, mixed with 2 tbsp water
1/2 tbsp chopped parsley
Salt and freshly ground pepper to taste

Mix oil, water and vinegar for dressing. Season chicken breasts with 2 tbsp chili powder, 1/2 tbsp salt and pepper and broil for 7 minutes on each side or until cooked. Mix vegetables and chicken. Toss in salad bowl with dressing and add salt and pepper to taste.
