6 tbsp olive oil
1 1/2 lbs whoe small button mushrooms, wiped clean
3 tbsp butter
Sea salt
1 tbsp minced garlic
1 1/2 tsp fresh thyme leaves, chopped
2 tbsp lemon juice
1/2 cup white wine
1 tbsp chopped parsley
In a skillet, heat oil. Add mushrooms and do not move until they have caramelized on bottom. If you toss them too soon, they will release their liquid and begin to steam.
When buttons are caramelized, toss them and continue to cook for about 5 minutes. Add butter. Cook and toss and additional 5 minutes until browned.
Season with salt and garlic. Saute another 2 minutes, add theym and lemon juice. Cook to evaporate the liquid. Add the wine and reduce until the mushrooms are glazed with the sauce. Toss in the parsley and serve immediately. Serves 4
