1/2 cup sliced mushrooms
2 tbsp minced shallots
1 tbsp butter
1/4 cup dry white wine or chicken broth
1 (15 1/2 oz) can artichoke hearts, drained and quartered
1/4 cup chopped chives and pimiento
12-16 oz peeled, deveined shrimp
Salt and pepper, to taste
Chopped parsley, garnish

Saute mushrooms and shallots in butter in a skillet until tender; stir in wine, artichoke hearts, chives and pimiento. Stir in shrimp and simmer, covered, until shrimp are tender and pink, 3-5 minutes. Season with salt and pepper. Garnish with parsley.
