2 cups shredded, cooked chicken or ground beef
1 pkg taco spices and seasonings
3/4 cup water
1 (16 oz) can refried beans
6 large flour tortillas
1 1/2 cups grated Monterey jack cheese
1/4 cup chopped pimento, green onion and fresh cilantro

Garnishes:
Shredded cheese
Sour cream
Guacamole
Lettuce
Salsa
Olives

In a skillet, combine meat, spices and water. Bring to a boil and reduce heat. Simmer, uncovered, 15 minutes. Stir in beans. On 1/2 side of each tortilla, spread approximately 1/3 cup mixture. Layer with remaining ingredients. Fold each in half. In a large skillet, heat a small amount of oil and fry tortilla on each side until slightly crisp. Cut each into fourths. Serve with garnishes.
