1/2 cup chopped tomato
1/4 cup minced green onions
1 clove garlic, minced
4 eggs, beate
1/2 cups shredded sharp cheddar cheese and pepper jack cheese
1 tsp chili powder
1/2 tsp cumin powder
1/2 tsp red pepper
1 (4 oz) can chopped green chilies, rinsed and drained
Coat a skillet with cooking spray, add first 3 ingredients. Saute until onions are tender. Combine tomato mixture, eggs, cheeses, seasonings and chilies. Stir well. Spoon 1 tsp mixture into miniature muffin pans sprayed with nonstick cooking spray. Bake at 425 for 8-10 minutes or until center are set. Remove form oven; let cool in pans 1 minute. Loosen edges with knife and remove from pans. Serve warm.
