FRIED SAUERKRAUT

2 can sauerkraut, rinsed and drained
1 medium onion, chopped
1 clove garlic, minced
About 2-3 tbsp bacon fat
1 bay leaf
Oregano, salt and pepper, to taste
1 (8 oz) can tomato sauce

In a skillet, saute onions and garlic in bacon fat until lightly browned and tender. Add sauerkraut, stir well. Add remaining ingredients; reduce heat, cover and simmer for 15-20 minutes on low. Remove cover, and stir well. Remove bay and serve.
