1 summer squash
1 small zucchini
1 yellow crookneck squash
5 mushrooms, sliced
1/2 onion, peeled
1 red bell pepper, seeled
1/4 cup olive oil
1 clove garlic, minced
1/4 tsp oregano and basil
Salt and pepper, to taste
1/2 cup grated Monterey jack and parmesan cheeses

Wash and slice all vegetables and steam together until tender. Meanwhile, combine oil, garlic and seasonings. Transfer vegetables to a casserole and cover with oil mixture and then cheeses. Cover and bake at 350 for 20 minutes. Remove cover and bake an additional 10 minutes. Serves 4
