1 (8 oz) jar pitted green olives, drained
1 (5 oz) jar pitted kalamata olives, drained
2 bay leaves
3-4 clove garlic, minced
Pepper and crushed red pepper flakes, to taste
1/4 tsp dried rosemary
1/2 tsp fennel seed and dried thyme
6 tbsp distilled white vinegar
Place olives in a colander, and rinse in cool, running water. Rinse out olive jars. In a mixing bowl, combine spices and vinegar. Add olives and toss until olives are coated. Place the mixture into the 2 jard; make sure each jar gets 1 bay leaf. Fill any empty space in the jars with water. Cap jar, shake well and refrigerate at least 2 days before serving.
