1 (12 oz) box spinach souffle
8 corn or flour tortillas
6 oz cooked chicken, chopped
1 cup shredded Monterey Jack cheese
1 cup shredded lettuce
1 cup chopped tomatoes
1 cup prepared pico de gallo

Cook spinach souffle in microwave according to pkg directions; allow it to cool for 5 minutes.

Preheat oven to 350. Place tortillas on a baking sheet and layer the following: 2 tbsp spinach, chicken, cheese. Place tacos in oven for 10 to 12 minutes. Top with lettuce and tomatoes, and serve with pico de gallo. Makes 4 servings.
