ITALIAN BEEF BRISKET

2 large onions, diced
2 stalks celery, chopped
4-5 lb beef brisket
1 envelope onion soup mix
2 cans Italian tomato sauce

In a roasting pan, place onions and celery. Top with meat and sprinkle with soup mix. Add the sauce, along with 1/2 can of water to the pan but not over the meat. Cover tightly with foil and bake at 350 for 3 hours. Remove foil, baste meat with gravy and bake, uncovered, and additional 1/2 hour. Remove from pan, cover and allow to rest before slicing.
