1 (3-4 lb) chicken, cut up
2 1/2 tsp oregano
1 tsp kosher salt
1/4 tsp pepper
5 clove garlic, thinly sliced
2 tbsp lemon juice
1 1/2 tbsp olive oil
Preheat oven to 350. Lightly oil a large casserole dish. Add the chicken pieces. Rub the skin with oregano, salt and pepper. Top the chicken with garlic and lemon juice. Place some of the spices between the skin and the meet. Allow the chicken to sig, covered, in the refrigerator for 1 hour. Drizzle the oil on the chicken and bake for 50-60 minutes or until tender and lightly browned. Baste often. Serves 4
