1(1 lb) pkg sundried tomato and basil spaghetti, cook pasta as directed
1 lb Italian style boneless, skinless chicken breasts
1 medium summer squash, cut in 1/2 lengthwise
1 medium zucchini, cut in 1/2 lengthwise
1 medium onion, cut in wedges
1 green pepper, quartered
1 red pepper, quartered
1 yellow pepper, quartered
1/4 cup olive oil
Salt and pepper
1/4 tsp crushed red pepper
Grated Parmesan cheese
Preheat grill or broiler. Brush vegetables on all sides with 2 tbsp olive oil. Season with salt and pepper. Grill or broil chicken and vegetables, about 5 min per side or until browned and chicken is fully cooked. Cool slightly. Slice chicken and coarsely chop
vegetables.
In skillet, combine remaining 2 tbsp oil, crushed red pepper, chicken and vegetables, heat thru. Toss hot spaghetti with chicken and vegetables. Sprinkle with parmesan cheese if desired.
