1 1/4 cups baking mix
1 1/2 cups sugar
1/2 cup butter
3 cups pecans, chopped
Caramel Sauce
1 cup butter
2/3 cup light brown sugar
Preheat oven to 350. Pour 1/4 cup of water on 8 1/2 x 11 inch jelly roll pan to wet the surface thoroughly. Pour off water, leaving about a tablespoon of water (do this in order to keep the foil from sliding). Press a sheet of aluminum foil on pan, covering bottom and sides.
Combine baking mix and sugar. Cut in butter using a fork; pat onto the baking pan. Spread nuts evenly over top of dough. In a heavy saucepan, melt butter and brown sugar over high heat. With a wooden spoon, stir caramel sauce to a rolling boil. Continue to cook for 30 seconds. Pour caramel sauce over top of nuts, covering as much as possible. Bake for 20-25 minutes.
Option: After rmoving from oven, sprinkle with chocolate chips while warm, spread when melted. Cool and cut into squares.
