PORK AND POTATOES OLE

1 tbsp vegetable oil
1/2 lb boneless pork loins, cut into 1/4 inch pieces
1 small onion, coarsely chopped
1/2 green bell pepper, coarsely chopped
1 clove garlic, minced
1 lb can crushed tomatoes
1/2 lb canned corn, drained
1 tbsp plus 1 tsp chili powder
2 tsp ground cumin
4 medium baking potatoes, baked
Shredded cheddar cheese and sour cream, garnish

Heat oil in a heavy skillet over medium-high heat. Saute pork, onion, pepper and garlic for 8-10 minutes or until meat is browned. Stir in next 4 ingredients. Simmer, covered, 15 minutes.

Split open potatoes and spoon 1 cup pork filling over each potatoes. Top with cheese and sour cream.
