3 medium tomatoes, sliced 1/2 inch thick
5 fresh basil leaves, snipped in half-and-half
1 green pepper, julienned
1/4 to 1/2 sweet yellow onion, sliced 1/4 inch thick
1/3 cup red wine vinegar
2/3 cup olive oil
1 clove garlic, minced
1 tsp salt and pepper
2 tsp fresh chopped oregano or 1/2 tsp dried

Overlap tomatoes in a circle in a shallow dish. Tuck basil leaf between each tomatoes. Sprinkle with onion and bell pepper over all.

Combine remaining ingredients in a jar and shake well. Pour over vegetables and let marinate at least 8 hours. Serves 6
