*SOUTH OF THE BORDER SHRIMP*

1 cup oil, divided use
5 garlic cloves
3 medium onions, chopped
3 lbs large shrimp peeled and deveined
3 onions, thinly sliced
2/3 cup white wine vinegar
1 1/2 tsp Salt and pepper, to taste
1/2 tsp coarsely ground black pepper
2 pickled jalapeno peppers, cut into strips (a must)
Heat 1/3 cup oil in frying pan. Add garlic and onions; saute for 10 minutes. Add shrimp and saute 5 minutes.
Combine sliced onions, remaining oil and next 4 ingredients in a bowl. Add shrimp; stir. Marinate at least 12 hours or longer. Serve cold. Serves 25-30
