1 cup cooked brown rice
1 lb shrimp, peeled and deveined
1/2 cup minced onion
1 bay leaf
3 cups peeled and chopped tomatoes
1 tsp chili powder
1/2 tsp salt and pepper

Toss all together and pour into a casserole dish. Bake at 350 for 30 minutes.
