BUTTERSCOTCH SAUCE

8 tbsp unsalted butter
2/3 cup sugar and packed brown sugar
2 tbsp water
3/4 cup light corn syrup
5 tbsp heavy cream

In a heavy saucepan, melt butter. Stir in the first 5 ingredients. Boil for about 2 minutes. Cool for 15 minutes and then whisk in the cream. Serve sauce warm or cold. Can be reheated in a double boiler or microwave.
