SPICY SHRIMP PIZZA

2 large garlic cloves, minced
1 tbsp olive oil
1 ea. 16 oz can of whole tomatoes including juice, chop 1/2 inch
1/4 tsp dried oregano
Cayenne to taste
1 lb small shrimp, peeled and deveined
1/3 lb shredded mozzarella cheese, preferably fresh mozzarella
1 (14 inch) large pizza crust.

Heat tbsp of olive oil in a small saute pan. Add the garlic and saute, take care not to burn. Add the tomatoes with juice, oregano, and cayenne. Reduce the liquid in the pan slightly. Add the shrimp and cook through. Check seasoning and remove from heat
Place pizza shell on a oiled baking sheet. Spread the cooked shrimp and tomato over the pizza crust. Bake at 450 until done, approximately 8-10 minutes. Serve with fresh grated parmesan and crushed red pepper flakes.

NOTE: If desired, other vegetables can be sauteed along with the garlic and tomatoes. Onions, mushrooms and peppers are particularly good.
