2 lbs red potatoes, washed
2 oz canola oil
2 tsp kosher salt
8 oz bacon, diced and cooked crisp
1 cup sour cream
1/2 cup mayonnaise
1 bunch green onion, chopped
8 oz sharp cheddar cheese, grated
8 oz butter
2 tbsp cracked pepper
1/2 tsp garlic powder and salt, or to taste
In a large bowl, toss potatoes in oil and salt until coated. Place potatoes in a sheet pan and bake at 350 until potatoes are tender. When done and cool enough to work with, cut potatoes in a large chunks and place in a large mixing bowl. Add remaining ingredients and fold all ingredients together being careful to leave the potatoes chunky. Serves 8
